Local
cuisine |
|
Lambayeque,
and Chiclayo in particular, is considered the
land of fine eating and drinking. Its cuisine
dates back to ancestral times and its secrets
have been handed down from generation to
generation. They say here that a table
appealing to the palate must have two types of
dishes: piqueos (assortment of
appetizers, heavily seasoned and spicy) and nudos
(hearty main dishes).
Among the former are the chinguiriro,
the cebiches (raw fish marinated in
lime juice), chirimpisco, panquitas,
cecinas (salted and dried meat) and humitas,
all of them accompanied with boiled yuca
(cassava) and mote (boiled corn
kernels).
The latter include arroz con pato a la
chiclayana (roasted duck on rice) seco
de cabrito (kid meat in cilantro sauce),
several types of aguadito (rice and
chicken or duck soup), espesado
(ground corn and beef or fish stock), pepián
de pavo (a turkey and corn dish) and ray
omelette.
Not to be missed among the drinks are the chicha
de jora (fermented corn drink) and the llonque
(a spirituous liquor)
